Ingredients of OHA soup

  1. You need of Palm oil.
  2. Prepare leaves of OHA.
  3. You need 8 of small cocoyam.
  4. Prepare of Assorted meat ( beef,shaki pkomo.
  5. You need of Dry fish.
  6. It's of Stock fish.
  7. You need of Yellow pepper.
  8. Prepare of Crayfish.
  9. Prepare 2 of stock cubes.
  10. You need 1 tsp of ogiri igbo.

Oha soup isn't exactly a go-to kind of soup because the main ingredient, Oha leaves, is a seasonal one. Oha soup is made in a similar way to ofe onugbu in that it is made with a thickener. This thickener could be traditionally Coco yam (boiled and pounded or processed in the food processor then added to the soup.) If you've gotten your hands on fresh Oha leaves, make a pot of oha soup. This Nigerian specialty is thickened with Cocoyam paste and seasoned with smoked fish, dried shrimp, and your favorite meats.

OHA soup instructions

  1. Wash and boil cocoyam until soft.
  2. Boil shaki,(cow tripe)beef,stock fish,and pkomo in 1 litre of water till they are well done.first sign of a done shaki is that the cuts will start curling on itself..
  3. When the meat is done add dry fish and, stock cubes, cook for 5 minutes.
  4. Add the grinded pepper and crayfish,ogiri igbo and Cook for 10 minutes.
  5. Add the palm oil and then the cocoyam paste in small lumps cover the pot and leave to cook on high heat till all the cocoyam lumps have dissolved.you can add more water if you feel the soup is too thick.
  6. Add the OHA leaves and leave to cook for about 5minutes.add salt to taste,stir and the soupis ready..

Cook the soup until it's as thick as you like and then stir in palm oil and oha leaves. Serve the soup with fufu and enjoy! To prepare the ora soup, you start by washing, spicing and cooking both the meat (assorted meat) and stockfish together. Once they are tender, you can then add the red palm oil, blended red pepper, stock cubes, ogiri ugba (local spice), salt and cocoyam paste (formed by stirring cocoyam powder with hot water to form a thick paste).
