Efo Riro. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute.

Efo Riro Efo Riro is a Yoruba word and it loosely means 'stirred spinach'. In Nigeria, the vegetables used for Efo Riro are 'Efo Shoko' (Lagos spinach) or 'Efo Tete' (African spinach). These are the local spinach varieties that are very popular and easily available. You can cook Efo Riro using 12 ingredients and 5 steps. Here is how you cook it.

Ingredients of Efo Riro

  1. Prepare of Beef.
  2. You need of Shaki (cow tripe).
  3. You need of Dry fish.
  4. It's 1 cup of palm oil.
  5. You need of Efo Shoko washed and diced.
  6. It's 5 of tatashe peppers.
  7. Prepare 2 tablespoons of ground crayfish.
  8. It's 2 of red onions.
  9. Prepare 2 of small stock cubes.
  10. Prepare 2 tablespoons of locust beans (iru).
  11. Prepare to taste of Salt.
  12. You need of Habanero peppers.

In other parts of the world, any spinach greens will do. Efo riro aka Nigerian spinach stew is a leafy, meaty meal from Yorubaland and is a product of the Yoruba people in Western Nigeria. It uses a bunch of local ingredients to make a mouthwatering, savory and tasty stew. Efo Riro is a very popular Yoruba soup in Nigeria, it is one of my favorite Nigerian soups because of its health benefits.

Efo Riro instructions

  1. Preheat the Palm oil - I like it hot but not bleached. Add the diced Onion and stir-fry till golden brown, then add your locust bean.
  2. Add the blended peppers and fry until the Sauce thickens up. Season with the stock cube, add Salt to taste, Crayfish. Stir until everything is well blended..
  3. Add the Dry fish and dried Prawns, stir then add cooked beef and sharki, cover it up and allow it simmer for about 3 to 5 minutes..
  4. Finally, add the efo leaf and mix thoroughly. Leave to cook uncovered for about 2 to 4 minutes. Adjust the seasoning if necessary..
  5. Serve with your favorite swallow like be, Amala, Fufu or Rice, Yam.

The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup. Believe me when I tell you that this happens to be one of the most delicious Yoruba soups that I have made. Efo Riro needs no introduction as it's one of the most popular vegetable soups in Nigeria and an absolute favourite of the Yorubas. It's quite an easy dish to prepare, as long as you follow the major instructions and requirements. A major rule is; using tomatoes for Efo Riro is an absolute No No!
